Chocolate peppermint cookies 🍪

Get ready to elevate your holiday baking with our irresistible Chocolate Peppermint Cookies! This festive recipe combines the rich flavors of dark cocoa, semi-sweet chocolate chips, and the cool, refreshing taste of crushed candy canes. The result? A perfect balance of indulgence and holiday cheer in every bite.

Ingredients:

  • 1 1/8 cup all-purpose flour (150g) or less
  • 1/2 cup unsweetened cocoa powder (50g), sifted
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2/3 cup unsalted butter (150g), softened
  • 1 cup granulated sugar (200g) (you can also use ½ granulated, ½ brown sugar)
  • 1 large egg
  • 5-10 drops of peppermint essence
  • 1 cup semi-sweet chocolate chips
  • 3/4 cup white chocolate, melted
  • 1/2 cup candy canes or peppermints, finely crushed

Instructions:

  1. Preheat the oven to 350°F. Line a cookie sheet with parchment paper and set it aside.
  2. In a medium-sized bowl, whisk or sift together flour, cocoa powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream together butter, and sugar.
  4. Mix in the egg and peppermint extract.
  5. Stir the dry ingredients into the wet ingredients until a dough forms.
  6. Fold in 3/4 cup semi-sweet chocolate chips.
  7. Drop the dough by the tablespoon onto the prepared cookie sheet, leaving two inches apart.
  8. Press a few semi-sweet chocolate chips into the dough (optional but gives a nice presentation).
  9. Bake for 6 minutes or until cookies are almost done.
  10. Remove from the oven and allow cookies to sit on the hot baking sheet to finish cooking.
  11. Place cookies on a cooling rack to finish cooling.
  12. Once cooled, drizzle cookies with melted white chocolate and sprinkle with crushed candy canes.
  13. When the chocolate has hardened, store in an airtight container between rows of parchment.
