Ingredients:
- 1 1/8 cup all-purpose flour (150g) or less
- 1/2 cup unsweetened cocoa powder (50g), sifted
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2/3 cup unsalted butter (150g), softened
- 1 cup granulated sugar (200g) (you can also use ½ granulated, ½ brown sugar)
- 1 large egg
- 5-10 drops of peppermint essence
- 1 cup semi-sweet chocolate chips
- 3/4 cup white chocolate, melted
- 1/2 cup candy canes or peppermints, finely crushed
Instructions:
- Preheat the oven to 350°F. Line a cookie sheet with parchment paper and set it aside.
- In a medium-sized bowl, whisk or sift together flour, cocoa powder, baking soda, and salt. Set aside.
- In a large bowl, cream together butter, and sugar.
- Mix in the egg and peppermint extract.
- Stir the dry ingredients into the wet ingredients until a dough forms.
- Fold in 3/4 cup semi-sweet chocolate chips.
- Drop the dough by the tablespoon onto the prepared cookie sheet, leaving two inches apart.
- Press a few semi-sweet chocolate chips into the dough (optional but gives a nice presentation).
- Bake for 6 minutes or until cookies are almost done.
- Remove from the oven and allow cookies to sit on the hot baking sheet to finish cooking.
- Place cookies on a cooling rack to finish cooling.
- Once cooled, drizzle cookies with melted white chocolate and sprinkle with crushed candy canes.
- When the chocolate has hardened, store in an airtight container between rows of parchment.
