Classic Comfort Food: Homemade Chicken Pot Pie

Craving a warm, hearty meal that’s packed with flavor? Look no further than this classic chicken pot pie! This homemade version is filled with tender chicken, mixed vegetables, and a rich, creamy sauce, all encased in a buttery, flaky crust. It’s the ultimate comfort food that’s perfect for a chilly day.  

Ingredients:

  • 1/4 cup unsalted butter
  • 1/2 cup chopped onion
  • 1 cup sliced carrots
  • 1/2 cup chopped celery
  • 1/3 cup all-purpose flour
  • 1 3/4 cup chicken broth
  • 1/2 cup heavy cream
  • 2 teaspoons dried thyme
  • 1 teaspoon of dried rosemary
  • 1 teaspoon of salt
  • 1/2 teaspoon ground black pepper
  • 2 1/2 cups cooked shredded chicken
  • 3/4 cup green peas
  • Heavy cream for brushing
  • 1 pack of biscuit dough

You can use frozen carrot and green peas bag.

Instructions:

Prep the filling: In a large skillet, melt butter over medium-high heat. Add onion, carrots, and celery. Cook for 5 minutes or until softened. Stir in flour and cook for 1 minute. Gradually pour in the warm broth and heavy cream. Stir in the thyme, salt, and pepper. Reduce the heat to low and bring to a simmer. Cook just until the sauce is thickened. Add the chicken and peas. Let cool.

Prepare the crust: Preheat oven to 350°F (175°C). Roll out half the biscuit dough into a circle. Place in a pie dish. Fill with chicken mixture. Roll out remaining dough and place on top. Crimp edges. Brush with heavy cream.

You can also transfer chicken mix into a baking dish and arrange biscuits on top of the filling.

Bake: Bake for 15-20 minutes, then reduce heat to 250°F (120°C) for an additional 15 minutes or until golden brown and filling is bubbly. Let cool for 20 minutes before serving.
