Ingredients:
- 1 1/4 cups all-purpose flour (135g)
- 3/4 teaspoon baking soda
- Pinch of salt
- 1/2 cup unsalted butter, softened (110g)
- 1/2 cup packed light-brown sugar (100g)
- 1/3 cup granulated sugar (65g)
- 3/4 cup creamy peanut butter or crunchy (130g)
I used crunchy peanut butter - 1 teaspoon vanilla extract
- 1 large egg
- 3/4 cups semisweet chocolate chips
Instructions:
- Preheat oven to 350°F (175°C). Line a large baking sheet with parchment paper.
- In a bowl, whisk together the flour, baking soda, and salt.
- In a large bowl or the bowl of a stand mixer fitted with the paddle attachment, combine the peanut butter, unsalted butter, sugar brown and granulated. Beat on medium speed until light and fluffy, 2-3 minutes. You can use the hand mixer also if you don’t have stand mixer.
- Add the egg and vanilla and mix. Scrape down the bowl. Beat again until well mixed well.
- With the mixer on low speed, gradually add in the flour mixture, and beat just until just joint. Stir in the chocolate chips. Or with a spatula start folding the flour with the mixer until joint.
- Drop 1 tablespoon-size balls of dough about 2 inches apart on the lined cookie sheets.
- Bake for 10 to 15 minutes or until the cookies are golden around the edges, but still soft in the center. (The longer bake time will give you a crisper cookie.)
- Remove from the oven and let cool on the baking sheet for 1 to 2 minutes, or until the cookies firm up a bit.
- Transfer to a wire rack and let cool completely. Cookies can be stored in an airtight container for 3 days or frozen for several months.
