- 1/4 cup granulated sugar (50g)
- 1/2 tsp ground cinnamon
- 1/2 tsp ground cardamom
- 3 tbsp. unsalted butter, melted (45g)
For the Muffins:
- 2 cups all-purpose flour (240g)
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1 tsp ground cardamom
- 1/2 tsp salt
- 1/2 cup unsalted butter, room temperature (110g)
- 1/2 cup packed light brown sugar (100g)
- 1/2 cup granulated sugar (100g)
- 2 large eggs
- vanilla extract
- 1/2 cup whole milk (120ml)
- 1 1/2 cups diced apple (about 2 apples 220g)
Instructions:
In a bowl, combine the flour, sugars, cinnamon, and melted butter. Stir until well combined. Start crumble it and leave it in the fridge until prepare the muffins.
In a large bowl, whisk together the flour, baking powder, cinnamon, and salt. In a separate bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy. Beat in the eggs one at a time, followed by the vanilla extract and milk. Gradually add the dry ingredients to the wet ingredients, Fold until just combined. Gently fold in the diced apples.
Divide the batter evenly among a greased 12-cup muffin tin. Sprinkle the topping crumbles evenly over the batter.
Bake in a preheated oven at 400°F for 10 minutes, then reduce the heat to 350F and continue baking for 14 to 15 minutes or until a toothpick inserted into the center comes out clean. Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely. Serve warm or cold.
