Halloween Spooky Sugar cookies

Halloween is a time for fun, festivities, and spooky treats. These Halloween sugar cookies are a perfect addition to your holiday celebrations, with their festive shapes and delicious taste. They are easy to make and can be customized with your favorite Halloween decorations.

Yields: Approximately 20 cookies Prep time: 30 minutes Cook time: 10-13 minutes

Ingredients:

  • 4 cups all-purpose flour (480g)
  • 1/4 teaspoon baking powder
  • 1 cup unsalted butter, softened (200g)
  • 1 cup granulated sugar (200g)
  • 2 eggs
  • 1 teaspoon vanilla extract
  • Halloween sprinkles or decorations

Instructions:

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

In a medium bowl, whisk together the flour and baking powder.

In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Chill in the fridge for 2 hours.

On a lightly floured surface, roll out the dough to about 1/4 inch thickness. Use Halloween-themed cookie cutters to cut out shapes from the dough. Place the cookies on the prepared baking sheet and bake for 10-13 minutes, or until golden brown. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.  

For the icing:

Ingredients

  • 3 egg whites
  • confectioners sugar (450g)
  • 1 teaspoon vanilla extract

Instructions:

Beat egg whites on medium-low speed in a stand mixer or large mixing basin until foamy, about 1 minute. Slowly include vanilla and confectioners’ sugar while running the mixer on low speed.

After everything is properly combined, accelerate to a medium-high pace and beat until shiny, stiff peaks form. Spoon icing into small bowls; if desired, tint with gel food coloring. (Since icing dries out rapidly, keep any that aren’t being used right away covered with plastic wrap).
