Strawberry Cheesecake Cookies

Ingredients:

For the Cookies:

1 cup butter, softened

¾ cup white sugar

¼ cup brown sugar

1 egg

1 egg yolk

1 teaspoon vanilla extract

1 teaspoon baking soda

¼ teaspoon salt

2¾ cups all-purpose flour

½ cup fresh strawberries, diced small

For the Cream Cheese Filling:

¾ cup cream cheese (6 oz)

¼ cup powdered sugar

Instructions:

In a mixing bowl, beat the butter and sugars together until light and fluffy. Add the egg, egg yolk, and vanilla extract, and mix until combined.

Stir in the baking soda, salt, and flour until just incorporated.

Gently fold in the diced strawberries, being careful not to overmix.

In a small bowl, mix the cream cheese and powdered sugar until smooth.

Line a small baking sheet or plate with parchment paper and place 12 heaping teaspoons of cream cheese mixture onto it. Freeze for at least one hour or until almost completely solid.

Scoop 10-12 heaping tablespoons of dough onto a lined baking sheet. Press a small dent into half of the dough balls.

Place a frozen cream cheese ball onto the dented dough and cover with another dough ball, pinching the edges to seal. Repeat for the remaining cookies.

Refrigerate the prepared dough while preheating the oven to 350°F (175°C).

Bake one tray at a time for 15-18 minutes or until the edges are lightly golden.

Let the cookies rest on the tray for 10-20 minutes before transferring them to a cooling rack.
