Instructions
- Preheat oven to 350°F (175°C) and line an 8-inch square baking pan with foil, leaving a 2-inch overhang. Grease with butter or nonstick spray.
- In a large bowl, combine flour, baking soda, salt, rolled oats, and brown sugar. Mix well.
- Cut in the butter using a pastry blender or fork until the mixture is crumbly and holds together when squeezed.
- Press two-thirds of the crumb mixture evenly into the pan.
- Spread the raspberry jam over the crust, leaving a ½-inch border to prevent caramelization.
- Sprinkle the remaining crumb mixture over the jam, pressing gently.
- Bake for 35 minutes, until golden brown and bubbly.
- Let cool completely (about 1½ hours) before lifting from the pan and slicing into 16 squares.
