1. Prepare the Filling:
- Mix ground almonds, brown sugar, egg, melted butter, vanilla, and almond extract until a soft paste forms.
- Chill in the fridge or freezer until firm enough to handle.
2. Make the Cookie Dough:
- Cream together the butter and sugars until light and fluffy.
- Add the egg, vanilla, and almond extract. Mix well.
- Stir in the flour, chopped almonds, baking powder, bicarbonate of soda, and salt. Mix into a dough.
3. Assemble the Cookies:
- Portion the frangipane filling into 10 equal amounts.
