  • 6g (1 level 15ml tbsp) finely ground espresso coffee powder
  • 100g (2/3 cup) chocolate chips

  • 240ml (1 cup) thickened or heavy cream
  • 170g (2/3 cup) mascarpone cream
  • 1 tsp vanilla extract
  • 1–2 tbsp cocoa powder (for dusting)

Instructions

  1. Preheat oven to 180°C (350°F) standard or 160°C (320°F) fan-forced. Line two baking trays with parchment paper.
  2. In a large bowl, beat butter and both sugars with an electric mixer until light and creamy.
  3. Add vanilla and egg. Mix until well combined.
