📝 Ingredients
For the Earl Grey Cookies:
- 1 cup (200 g) granulated sugar
- 1 cup (220 g) unsalted butter, softened
- 3 tbsp (10 g) Earl Grey tea
- 1 tbsp culinary lavender
- 2 1/2 cups (300 g) all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- 1 egg, at room temperature
- 1 tsp vanilla
For the Lavender Sugar:
- ½ cup (100 g) granulated sugar
- 1 tbsp culinary lavender
For the Lavender Cream Cheese Frosting:
- 1 tbsp (2 g) culinary lavender
- 1 cup heavy whipping cream
- 4 oz (110 g) mascarpone cream cheese
- 1 cup powdered sugar (130 g)
- Purple food coloring (optional)

1. Prepare Lavender Sugar:
Pulse the granulated sugar and culinary lavender in a food processor until finely ground. Set aside for later use or roll dough balls in it before baking.
2. Make the Cookie Dough:
In a small bowl, whisk together flour, baking soda, lavender, salt, and Earl Grey tea.
In a large bowl, cream the butter and sugar until light and fluffy. Add the egg and vanilla, mixing until combined.
Gradually add dry ingredients to the wet ingredients, mixing just until a dough forms. Chill the dough for at least 15 minutes.
3. Bake the Cookies:
Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper. Scoop tablespoon-sized dough balls, optionally roll in lavender sugar, and place them 2 inches apart.
Bake for 12–14 minutes, until edges are just set. Cool on the tray for 5 minutes, then transfer to a wire rack.
4. Make the Frosting:
Steep lavender in 2 tbsp of hot cream for 10 minutes, then strain.
In a bowl, beat mascarpone, and powdered sugar until smooth.
In another bowl, whip the heavy cream (including the lavender-infused cream) to stiff peaks. Gently fold into the mascarpone mixture. Add food coloring if desired.
5. Frost the Cookies:
Once cookies are completely cool, pipe or spread the lavender cream cheese frosting on top. Decorate with a sprinkle of lavender or purple sugar crystals if you like.
