- 80g brown sugar
- 70g rice flour (or glutinous rice flour for extra chewiness)
- 30g soybean flour (kinako) + more for dusting
- 150g water (initial mix)
- 20g water (final mix)
- 5g soy sauce

- Roast the Walnuts:
In a dry frying pan over medium heat, roast the walnuts until fragrant. Remove from heat and coarsely chop. - Make the Base Batter:
In a bowl, mix brown sugar, rice flour, and 30g soybean flour. Add 150g of water gradually, stirring constantly to dissolve lumps and form a smooth batter. - First Microwave Step:
Add soy sauce, stir, then microwave at 600W for 1 minute. - Second Microwave Step:
Mix well, breaking up any uneven texture. Microwave again at 600W for 2 minutes. Stir until the mixture is uniformβsticky and mochi-like. - Final Mix:
Add 20g of water, stir thoroughly. Then fold in the roasted walnuts until evenly incorporated. - Shape and Finish:
Spread some soybean flour (kinako) onto a tray or flat surface. Pour or spoon the Yubeshi mixture onto it. Flatten and shape as desired. - Cut and Dust:
Moisten a knife with water to prevent sticking, cut into pieces, and dust the cut edges with more kinako.
