🍪 Ingredients
For the Cookies
- 1 cup (226g) unsalted butter, softened
- 1 cup (200g) brown sugar
- ½ cup (100g) granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- 3 cups (375g) all-purpose flour
- 1 cups (about 10 cookies) crushed Oreos
- 1 cup (85g) cocoa powder
- 1 tbsp corn starch
- 1 tsp baking soda
For the Ganache
- 4.25 oz (120g) dark chocolate, finely chopped
- ½ cup (120ml) heavy cream
- 1 tbsp espresso or strong brewed coffee (optional, enhances flavor)
👩‍🍳 Instructions
1. Make the Cookie Dough
Preheat the oven to 350°F (175°C). In a large bowl, beat the butter, brown sugar, and granulated sugar together until creamy and smooth. Add eggs and vanilla extract, and beat until light and fluffy.
2. Add Dry Ingredients
Fold in the flour, crushed Oreos, cocoa powder, corn starch, baking soda. Mix until fully combined and a thick dough forms.
3. Shape & Bake
Scoop dough into 3-tablespoon balls (about 6 per tray) and slightly flatten with the bottom of a measuring cup or glass.
Bake for 11 minutes, remove, and gently press the centers to form a shallow well. Return to the oven for 3 more minutes.
Let the cookies cool completely on a wire rack.
4. Make the Ganache
Heat the heavy cream in a saucepan or microwave just until simmering. Pour over the chopped chocolate in a bowl. Let sit for 1–2 minutes, then stir until smooth and glossy. Add espresso for extra depth, if desired. Let cool slightly.
5. Fill & Finish
Once the cookies are fully cooled, spoon or pipe the ganache into the center of each cookie. Let the ganache set slightly before serving, or chill briefly for a firmer center.
