Ingredients

Cookie Dough

  • 70 g ripe banana (ΒΌ cup mashed + 1 tbsp)
  • 4 Biscoff cookies, crushed (~40 g)
  • 55 g unsalted butter, room temp (4 tbsp)
  • 100 g light brown sugar (Β½ cup, packed)
  • 1 egg yolk
  • 1 tbsp Biscoff spread
  • 1 tsp vanilla extract
  • 180 g all-purpose flour (1Β½ cups)
  • 1 tsp baking soda
  • Β½ tsp salt

Whipped Cream Topping

  • 150 g heavy whipping cream (β…” cup)
  • 1 tbsp granulated sugar (12.5 g)
  • 1 tsp vanilla extract
  • β…› tsp salt

Banoffee Topping

  • 100 g dulce de leche (about β…“ cup)
  • Fresh banana slices (about 1 medium banana)

Instructions

  1. Preheat oven to 350Β°F (175Β°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, mash the ripe banana and mix in the crushed Biscoff cookies.
  3. Cream the butter and brown sugar together until light and fluffy. Add in the biscoff spread, egg yolk and vanilla; mix well.
  4. Add the banana-Biscoff mixture to the wet ingredients and stir to combine.
  5. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually fold into the wet mixture until just combined.
  6. Chill dough for 30 minutes for thicker cookies.
  7. Scoop dough onto the baking sheet to make 8 cookies. Bake for 12–15 minutes or until edges are golden. Let cool completely.
  8. Whip the cream with sugar, vanilla, and salt until soft peaks form.
  9. Once cookies are cool, top each with a spoonful of dulce de leche, a dollop of whipped cream, and banana slices. Serve immediately.
