- ¼ cup (50 g) brown sugar
- ¼ cup (50 g) granulated sugar

- 1 tsp (5 g) vanilla paste
- 1 cup + 1 tbsp (130 g) all-purpose flour
- 2 tbsp (15 g) milk powder
- 1 tsp (4 g) baking powder
- ¼ tsp (1.5 g) salt
- 1 tbsp (7 g) unsweetened cocoa powder
- 1 tbsp dirty chai tea leaves or use spices:
- 1 tsp (2.5 g) ground cinnamon
- 1 tsp (2 g) ground ginger
- ½ tsp (1 g) ground cloves
- ½ tsp (1 g) ground allspice
- ¼ tsp (0.5 g) ground black pepper
For rolling:
- ½ cup (100 g) granulated sugar
- ½ cup (60 g) powdered sugar
- 1 tsp (2.5 g) ground cinnamon
Instructions
- Make the brown butter: In a small pan, cook the butter over medium heat until it turns golden brown and nutty in aroma. Let cool slightly.
- Mix wet ingredients: In a bowl, whisk together the brown butter, espresso powder, brown sugar, granulated sugar, egg, and vanilla paste until smooth.
- Whisk dry ingredients: In a separate bowl, combine flour, milk powder, baking powder, salt, cocoa powder, and spices (or dirty chai tea leaves).
- Combine: Add dry ingredients to the wet mixture and stir until just combined.
- Roll & chill: Roll the dough into 6 large balls, coat in the sugar mixture, then place on a baking sheet. Chill for at least 30 minutes (up to 2 hours) in the fridge.
- Roll again: After chilling, roll the cookie dough balls once more in the sugar mixture.
- Bake: Preheat oven to 375°F (190°C). Bake cookies for 4 minutes, then reduce oven temperature to 350°F (175°C) and continue baking for another 10 minutes, until edges are set but centers are slightly soft.
