Ingredients

For the dough:

  • ¼ cup (57 g) brown butter
  • 1 tbsp (6 g) espresso powder
  • ¼ cup (50 g) brown sugar
  • ¼ cup (50 g) granulated sugar
  • 1 large egg (50 g)
  • 1 tsp (5 g) vanilla paste
  • 1 cup + 1 tbsp (130 g) all-purpose flour
  • 2 tbsp (15 g) milk powder
  • 1 tsp (4 g) baking powder
  • ¼ tsp (1.5 g) salt
  • 1 tbsp (7 g) unsweetened cocoa powder
  • 1 tbsp dirty chai tea leaves or use spices:
    • 1 tsp (2.5 g) ground cinnamon
    • 1 tsp (2 g) ground ginger
    • ½ tsp (1 g) ground cloves
    • ½ tsp (1 g) ground allspice
    • ¼ tsp (0.5 g) ground black pepper

For rolling:

  • ½ cup (100 g) granulated sugar
  • ½ cup (60 g) powdered sugar
  • 1 tsp (2.5 g) ground cinnamon

Instructions

  1. Make the brown butter: In a small pan, cook the butter over medium heat until it turns golden brown and nutty in aroma. Let cool slightly.
  2. Mix wet ingredients: In a bowl, whisk together the brown butter, espresso powder, brown sugar, granulated sugar, egg, and vanilla paste until smooth.
  3. Whisk dry ingredients: In a separate bowl, combine flour, milk powder, baking powder, salt, cocoa powder, and spices (or dirty chai tea leaves).
  4. Combine: Add dry ingredients to the wet mixture and stir until just combined.
  5. Roll & chill: Roll the dough into 6 large balls, coat in the sugar mixture, then place on a baking sheet. Chill for at least 30 minutes (up to 2 hours) in the fridge.
  6. Roll again: After chilling, roll the cookie dough balls once more in the sugar mixture.
  7. Bake: Preheat oven to 375°F (190°C). Bake cookies for 4 minutes, then reduce oven temperature to 350°F (175°C) and continue baking for another 10 minutes, until edges are set but centers are slightly soft.
  8. Cool & enjoy: Allow cookies to cool on the tray for 5 minutes before transferring to a wire rack.
