- 1 teaspoon vanilla paste (or extract)
- 200 g (1 1/2 cups + 1 tbsp) all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- (Optional) 60 g (1/2 cup) crushed walnuts
For the Cream Cheese Frosting
- 113 g (1 stick / 1/2 cup) unsalted butter, softened
- 225 g (1 pack / 8 oz) cream cheese
- 180 g (1 1/2 cups) powdered sugar
- 1 teaspoon vanilla paste
For the Caramelized Apples
- 1 medium apple, diced into cubes (about 150 g)
- 100 g (1/2 cup, packed) brown sugar
- 12 g (1 1/2 tablespoons) cornstarch
Instructions
1. Make the Cake
- Preheat oven to 350°F (175°C). Grease and line a 6-inch round cake pan.
- In a large bowl, whisk together the oil, sugars, applesauce, milk, and vanilla until smooth.
- In another bowl, sift together flour, baking soda, and spices.
- Fold dry ingredients into wet until just combined. (Stir in walnuts if using.)
- Pour into pan and bake 40 minutes, until a toothpick comes out clean.
- Cool completely, then slice cake in half horizontally.
2. Prepare the Frosting
- Beat butter and cream cheese until smooth.
- Add powdered sugar and vanilla, beating until fluffy.
3. Caramelize the Apples
- In a small saucepan, combine apples, brown sugar, and cornstarch.
- Cook over medium heat until apples are soft and sauce thickens. Cool slightly.
4. Assemble the Cake
- Spread frosting on bottom cake layer.
- Spoon caramelized apples over frosting.
- Place second cake layer on top, then frost again.
- Decorate with remaining caramelized apples.
