Ingredients

For the Cornbread Cookies

  • 120 g (1 cup) all-purpose flour
  • 80 g (½ cup) yellow cornmeal
  • 8 g (1 tbsp) cornstarch
  • ¼ tsp cream of tartar
  • ½ tsp baking soda
  • 110 g (½ cup) butter, softened
  • 50 g (¼ cup) packed brown sugar
  • 25 g (2 tbsp) granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 20 g (1 tbsp) honey

  • 28 g (2 tbsp) unsalted butter, slightly cold
  • 100 g (about 3.5 oz) cream cheese, softened
  • 20 g (1 tbsp) honey
  • 120 g (1 cup) powdered sugar

Instructions

  1. Cream the butter and sugars
    In a large bowl, cream together softened butter, brown sugar, and white sugar with a hand or stand mixer for 2–3 minutes, until light and fluffy.
  2. Mix in wet ingredients
    Add the egg, vanilla, and honey. Beat until fully incorporated.
  3. Combine dry ingredients
    In a separate bowl, whisk together flour, cornmeal, cornstarch, cream of tartar, and baking soda.
  4. Form the dough
    Slowly mix the dry ingredients into the wet mixture until just combined. Do not overmix.
