Ingredients

For the Honey Buttercream
- 28 g (2 tbsp) unsalted butter, slightly cold
- 100 g (about 3.5 oz) cream cheese, softened
- 20 g (1 tbsp) honey
- 120 g (1 cup) powdered sugar
Instructions
- Cream the butter and sugars
In a large bowl, cream together softened butter, brown sugar, and white sugar with a hand or stand mixer for 2–3 minutes, until light and fluffy. - Mix in wet ingredients
Add the egg, vanilla, and honey. Beat until fully incorporated. - Combine dry ingredients
In a separate bowl, whisk together flour, cornmeal, cornstarch, cream of tartar, and baking soda. - Form the dough
Slowly mix the dry ingredients into the wet mixture until just combined. Do not overmix. - Chill
Cover and refrigerate dough for 1 hour. - Preheat and shape
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper. Scoop dough into 6 large balls (use an ice cream scoop).
Bake for 11–14 minutes, until the edges are slightly golden. Allow cookies to cool on the sheet for 5 minutes before transferring to a wire rack. - Make the honey buttercream
