- ½ tsp vanilla extract
- ¾ cup (127g) semi-sweet chocolate chips, divided
Instructions
- Preheat oven to 425°F (220°C). Line a muffin pan with paper liners.
- Whisk dry ingredients: In a medium bowl, whisk flour, cocoa powder, baking powder, baking soda, and salt.
- Mix wet ingredients: In another bowl, mash the bananas until smooth. Whisk in sugar, egg, egg yolk, buttermilk, oil, and vanilla until combined.
- Combine: Gently fold the dry mixture into the wet mixture. Stop when just combined—don’t overmix.
- Add chocolate: Fold in about ½ cup chocolate chips, reserving the rest for topping.
- Fill tins: Divide batter evenly among muffin cups, filling about ¾ full. Sprinkle reserved chocolate chips on top.
- Bake: Bake at 425°F (220°C) for 9 minutes. Without opening the oven, reduce the temperature to 350°F (175°C) and continue baking for 10–13 minutes, or until a toothpick comes out with moist crumbs.
